6 Baked Brie Appetizers

Hi there. If I had to pick one appetizer that works for literally everything from now through New Year's Eve, it's baked brie — and it's not even close.
Here's why it's my forever favorite: one little wheel of cheese, fifteen minutes in the oven, and whatever you spoon over the top makes it a whole different appetizer. Honey and walnuts for the classic girls' night. Cranberry and orange when it's time to look festive. Pepper jelly when you want people to ask, "wait, what IS that?" It is the hardest-working appetizer in my kitchen, it feeds a crowd for the price of a pizza, and — this matters — it holds beautifully on the board while everybody grazes, so you're not stuck babysitting the oven at your own party.
I bake the wheel the exact same way every time (that's the master method below), then I change the topping. Six toppings, one method, zero stress. Pick your personality and let's go.
What you'll need, whichever topping you pick
Every version starts with the same base, so stock these once and you're ready for all six:
- 1 wheel (8 oz) brie — shop at Walmart
- Baguette, sliced — shop at Walmart
- Water crackers or entertainment crackers — shop at Walmart
- Apple or pear slices and a handful of red grapes, for the board — shop at Walmart
And the pieces that make it look like you tried (Amazon): a little ceramic brie baker keeps the cheese contained and goes straight from oven to table, and a pretty board does the rest of the showing off.
The master method (same for all six)
- Heat the oven to 350°F. Set the brie in a small oven-safe baker or on a parchment-lined baking sheet.
- Your one decision: peel or score. Slice the top rind clean off and the cheese melts into a gooey little pool (my favorite for scooping). Or score the top rind in a crosshatch with a sharp knife and leave it on for a tidier, sliceable wheel. Both are right. Pick the vibe.
- Bake 10–15 minutes, until the wheel feels very soft when you press the side gently and the center looks like it wants to relax. Don't wait for it to slump — carryover heat keeps it going on the counter.
- Rest 2–3 minutes. Spoon your topping over the top (the nut toppings get an optional 3 extra minutes back in the oven so they toast and set — noted where it applies), then carry it straight to the table with crackers and baguette while it's still gloriously melty.
That's it. That's the whole technique. Now the fun part.

1. Honey & Walnut
The original. The classic. The one your friends will expect you to make forever once they've had it — warm honey running down into that creamy cheese with crunchy little walnuts is just never wrong.
For the top:
- 1/3 cup chopped walnuts — shop at Walmart
- 3 Tbsp honey, plus more for drizzling — shop at Walmart
- A tiny pinch of flaky salt
- A few fresh thyme leaves, if you're feeling fancy — shop at Walmart
Top it: Bake the wheel by the master method. Scatter the walnuts over the top, drizzle the honey generously over everything, add your pinch of salt and the thyme, and send it back to the oven for 3 minutes so the honey bubbles and the nuts toast. Serve the second it comes out — this one doesn't wait, and it shouldn't have to.

2. Cranberry & Orange
This is the Christmas one, and she knows it. Tart red cranberries, bright little curls of orange zest, and creamy brie — it's basically the holidays in a baker, and it uses up that cranberry sauce that's already in your fridge.
For the top:
- 1/2 cup whole berry cranberry sauce — shop at Walmart
- 1 tsp fresh orange zest — shop at Walmart
- 1 fresh rosemary sprig, for looks — shop at Walmart
Top it: Bake the wheel by the master method. Spoon the cranberry sauce right over the hot cheese — the heat loosens it just enough to drape. Shower the orange zest over the top and tuck the rosemary sprig alongside. Color, sparkle, done. If you have leftover cranberry sauce from the big dinner, congratulations, you just turned it into the appetizer everybody photographs.

3. Garlic & Herb
For your savory people. Not every appetizer at the party has to be sweet, and this warm, garlicky, herby wheel is the one that disappears first whenever my husband's friends are anywhere near the table.
For the top:
- 1 Tbsp olive oil — shop at Walmart
- 2 cloves garlic, minced very fine — shop at Walmart
- 1 tsp fresh rosemary, minced fine, plus 1 tsp fresh thyme leaves — shop at Walmart
- Cracked black pepper and a pinch of salt
Top it: Stir the garlic and herbs into the olive oil and spoon it over the wheel before it goes in the oven — this one bakes with its topping on, so the garlic turns sweet and golden instead of raw and sharp. Bake by the master method, finish with the pepper and salt, and serve with the crustiest baguette you can find for sopping up every bit of that herby oil.

4. Fig & Prosciutto
Sweet, salty, and just a little bit fancy — this is the one that makes people think you watch cooking shows with a notebook. Fig preserves are the secret weapon of easy entertaining: one spoonful tastes like you reduced something for hours. You did not. You opened a jar, and that's between us.
For the top:
- 1/3 cup fig preserves — shop at Walmart
- 2–3 slices prosciutto, torn into ribbons — shop at Walmart
- A few fresh thyme leaves
Top it: Bake the wheel by the master method. Spread the fig preserves over the hot cheese, then drape the prosciutto ribbons loosely over the top — ruffles, not a blanket, so you get a little in every bite. Scatter the thyme. The warm cheese softens the prosciutto just enough while it stays silky. Serve immediately and accept your compliments graciously.

5. Maple & Pecan
Tastes like pie, eats like cheese, gone in four minutes flat. The brown sugar and maple caramelize a little in the oven and turn the pecans into something close to praline — if a slice of pecan pie and a wheel of brie had a baby, this would be her.
For the top:
- 1/3 cup pecan halves, roughly chopped — shop at Walmart
- 3 Tbsp pure maple syrup — shop at Walmart
- 1 Tbsp brown sugar — shop at Walmart
- A pinch each of cinnamon and salt
Top it: Stir the pecans, maple, brown sugar, cinnamon, and salt together. Bake the wheel by the master method, spoon the maple pecans over the top, and return it to the oven for 3–4 minutes until the syrup is bubbling at the edges. Let it rest the full 3 minutes this time — that glaze is lava-hot and it thickens into something wonderful as it sits.

6. Pepper Jelly
Two ingredients. TWO. And it might be the most-asked-about appetizer I make. Sweet heat over creamy cheese is a combination people lose their minds over, and the red jelly over the white brie looks like you planned it for a magazine cover. You planned it in the grocery aisle. Also between us.
For the top:
- 1/3 cup red pepper jelly — shop at Walmart
- 1 green onion, thinly sliced, for garnish — shop at Walmart
Top it: Bake the wheel by the master method. While it's hot, spread the pepper jelly edge to edge — it melts into a glossy glaze all on its own. Shower the green onion over the top and serve. Sweet, a little kick, creamy. Watch it vanish.
Brie tips before you shop
- Size it right. One 8 oz wheel comfortably serves 6–8 as part of a spread. Big crowd? Bake two wheels with two different toppings instead of one giant wheel — more variety, better melting.
- Room temp first. Take the brie out of the fridge 30 minutes before it goes in the oven. A cold center is the only way this recipe can disappoint you.
- Cold cheese, sharp knife. If you're peeling the top rind, work while the wheel is still cold — the rind slices off clean instead of dragging.
- The leftovers trick. Leftover baked brie (a rare event) reheats at 300°F for about 5 minutes, or gets chopped and folded into scrambled eggs the next morning. You're welcome.
