2 Serrano chilis, seeded & chopped1 chopped garlic clove1/2 cup lime juice1/4 tsp grated ginger1 tsp coconut sugar1 tsp salt1lb shrimp8 oz arugula3 tbsp. grated Parmesan
1. Add chills & garlic to blender with lime juice, coconut sugar & salt. Blend until smooth.2. Preheat grill pan.3. Rub chili mixture onto shrimp and place on heated grill pan. Cook until pink (about 3 minutes per side.)4. Place arugula on plates & put cooked shrimp on top. Drizzle with extra chili mixture and top with Parmesan cheese. Enjoy!
