Oatmeal Cranberry Cookies

Holidays are a perfect time for celebration & what better way than home-baked cookies? Try the Oatmeal Cranberry Cookies; my personal holiday favorite.

Serves :: 20 (2 Cookies Each)

Ingredients

  • 2 cups flour

  • 1 tsp baking soda

  • 1/2 tsp sea salt

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 2 cups old-fashioned rolled oats

  • 1 cup coconut oil, melted

  • 1 cup coconut sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 1-1/2 cups dried cranberries

  • 1/2 cup diced walnuts

Directions:

  • Preheat oven to 325 F degrees.

  • Whisk together flour, baking soda, salt, cinnamon, and nutmeg.

  • Add oats and stir to combine.

  • In a large mixing bowl, using an electric mixer, beat coconut oil and coconut sugar until incorporated, about 4-5 minutes.

  • Add vanilla and eggs and mix on low speed until well combined.

  • Add oat mixture a little at a time just until combined.

  • Stir in cranberries and walnuts.

  • Roll dough into small balls and place on a parchment paper-lined baking sheet about 2” apart. Roughly 40 balls.

  • Press cookies down slightly, place on the center oven rack. Bake 7 minutes then rotate pan and bake for an additional 7 minutes. Cookies should still be slightly soft in the center as they will continue baking when removed.

  • Allow cookies to cool completely, store in an airtight container for up to 3 days. For best results, don’t refrigerate.
