Holidays are a perfect time for celebration & what better way than home-baked cookies? Try the Oatmeal Cranberry Cookies; my personal holiday favorite.
Serves :: 20 (2 Cookies Each)
Ingredients
2 cups flour
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
1/4 tsp nutmeg
2 cups old-fashioned rolled oats
1 cup coconut oil, melted
1 cup coconut sugar
2 eggs
2 tsp vanilla extract
1-1/2 cups dried cranberries
1/2 cup diced walnuts
Directions:
Preheat oven to 325 F degrees.
Whisk together flour, baking soda, salt, cinnamon, and nutmeg.
Add oats and stir to combine.
In a large mixing bowl, using an electric mixer, beat coconut oil and coconut sugar until incorporated, about 4-5 minutes.
Add vanilla and eggs and mix on low speed until well combined.
Add oat mixture a little at a time just until combined.
Stir in cranberries and walnuts.
Roll dough into small balls and place on a parchment paper-lined baking sheet about 2” apart. Roughly 40 balls.
Press cookies down slightly, place on the center oven rack. Bake 7 minutes then rotate pan and bake for an additional 7 minutes. Cookies should still be slightly soft in the center as they will continue baking when removed.
Allow cookies to cool completely, store in an airtight container for up to 3 days. For best results, don’t refrigerate.
